We make everything at Ballymacmoy, on the wooded banks of the River Blackwater in north Cork.
It was from this very townland that Richard Hennessy set out in the 1740s, before founding the cognac house that still carries his name. The same Blackwater valley that shaped that story still shapes ours.
We’re a much smaller affair, a kitchen, a stretch of riverbank and a few good hedges, but it’s a quiet privilege to make something rooted in the same ground.
