Delicate and aromatic. Picked in the brief few weeks the cream blossom hangs heavy over the lanes, then steeped gently so none of its perfume is lost.
The lightest of the three: pale gold and floral. It belongs with summer fruit, soft cheeses and anything that wants brightening without weight.

A few drops over strawberries, peaches or melon with a little black pepper and torn basil.
Stir into cold soda over ice for a floral, alcohol-free aperitif, or top up a glass of dry sparkling wine.
Shake with good olive oil for shaved fennel, cucumber and soft herbs, or to dress poached fish.
