Hawthorn Vinegar

Bright, floral and gently tannic. The berry of the lone fairy tree, cooked down and steeped in raw Irish cider vinegar until it turns a deep autumn red.

It began as an experiment in hawthorn ketchup and became the vinegar that started everything. A spoonful lifts a dressing, deglazes a pan of game, or mixes with cold sparkling water into a refreshing drink.

Three ways to use it

01

In a dressing

Whisk with cold-pressed rapeseed oil, a little honey and mustard for bitter winter leaves and blue cheese.

With game & pork

Deglaze the roasting pan with a splash to cut the richness of venison, duck or a slow-cooked shoulder.

03

As a shrub

A tablespoon mixed with cold sparkling water and ice: a sharp, floral drink with no alcohol.
